EcoScraps Donated Organic Soil to the University of Utah Gardens
PROVO, UT (April 5, 2011)- EcoScraps, an organic soil manufacturer, donated 5,000 lbs of soil to the University of Utah this week to be used in their gardens.
“We are happy to sponsor the University of Utah gardens,” said Daniel Blake, CEO of EcoScraps. “Our organic soil will provide nutrients the gardens need to continue to grow nutritious food for students and community members.”
The University of Utah has been growing a network of campus edible gardens for nearly a decade. They serve as outdoor living laboratories where students grow food and learn about healthy nutrition. They are also used as living laboratories to teach students the skills and benefits of organic gardening methods, promote environmental awareness, sustainability and social justice.
Dr. Fred Montague, a now retired wildlife biologist and former academic advisor at the University of Utah created the gardens for a Principles of Organic Gardening course offered in the summer semesters. In the course, students learn about the importance of growing food more sustainably and helping enhance local food security in the urban environment.
“This year, we’ll be embarking on a four season harvest to showcase how to grow food year long, a practice which will definitely need healthy soils amended with delicious compost. We are very grateful for the wonderful donation from Ecoscarps which will augment the comparatively smaller amount of compost we’ve been able to make ourselves using campusbased food scraps,” says Alexandra Parvaz, U of U Campus Garden Coordinator.
“We are planning to sell about 60 percent of our food to our campus cafeterias and the University Farmer’s Market to keep the gardens financially solvent,” said Parvaz,. “We will also donate about 40 percent to food pantries such as Crossroads Urban Center, and several youth outreach programs that are building gardens at various Title 1 elementary schools.”
EcoScraps has also donated soil to various community gardens in the past year. They plan to sponsor several other gardens throughout Utah, Arizona, Colorado and Oregon in the near future.
